Sweet Palermo filled with oriental noodles


2 red and 2 yellow peppers julienned
4 sweet peppers (2 red and 2 yellow) removing the seeds and stems
Rice vermicelli noodles
Soya sauce
Nam pla sauce
1 clove of garlic
Light olive oil
1 onion
Freshly ground black pepper

Fill a large bowl with water and soak noodles for 30 to 40 minutes or until they are soft and flexible. Julianne the onion and the peppers and finely chop the garlic, and stir-fry all over high heat for 2 minutes. Drain the noodles and add the soya and nam pla sauces. Mix all over high heat for 1 minute. Now fill peppers with noodles and serve them whole or cut in thick slices.
