Sweet Palermo snack ‘sausages’

When you’re hanging out with friends, don’t forget to indulge yourselves with some tasty and healthy snacks once in a while. And you’ve guessed it: we have the perfect solution for you! All you need is Sweet Palermo, avocado cream and hunger pangs! You should definitely give these snack slices a try.

Ingredients

- 1 yellow Sweet Palermo
- 1 orange Sweet Palermo
- 2 ripe avocados
- 100 g cream cheese
- 2 tbsp lemon juice
- ½ tsp garlic powder
- 95 g toasted pistachios

Preparation

1. Slice off (and save) the tops from the two Sweet Palermos and then remove the seeds. In a mincer, combine the avocado with the cream cheese, lemon juice, garlic powder and a pinch of salt and pepper. Grind until it has a smooth consistency. Taste the mixture to check the flavour, adding more seasoning until you reach the desired strength.

2. Coarsely chop the toasted pistachios and stir them into the avocado mixture. Next, put the mixture into a piping bag and squeeze it into the two Sweet Palermos until they are slightly over-filled. Then replace the tops of the Sweet Palermos. Store in the fridge until you need them. When you are ready to serve the snacks, place the filled Sweet Palermos on an attractive cutting board and use a sharp knife to cut them into slices like sausages. Serve with extra salt and pepper in case your friends wish to spice things up a bit more.

TIP: If you prefer a vegan version, you can replace the cream cheese with two more avocados for an equally tasty variation.
