2 slices of wholemeal bread
1 tbsp mayonnaise
1 tsp coarse mustard
1 ripe avocado
¼ sweet pointed pepper (orange or red)
½ tub of BroccoCress
1 Toast the bread until crispy and golden brown. In the meantime, slice the pointed pepper into thin rings. Allow the toast to cool slightly and then spread it thinly with the mayonnaise and mustard.
2 Slice the avocado in half lengthways and remove the stone. Use a spoon to scoop out the flesh and place one avocado half on each slice of toast. Gently mash it using a fork and spread it evenly. Season to taste with salt and pepper. Arrange the pointed pepper and BroccoCress on top.
NB To serve more people, simply increase the quantities accordingly.
