Rice cake with cream cheese, ajvar and sweet pointed pepper

Ingredients

1 rice cake or cracker
1 tbsp cream cheese or goat’s cheese
1 tbsp mild ajvar (pepper-based spread from Macedonia/Serbia)
¼ sweet pointed pepper (yellow)
½ tbsp pistachios, coarsely chopped
1 tsp roasted sesame seed

Preparation

1 Spread the rice cake or cracker with the cream cheese and ajvar evenly. Thinly slice the pointed pepper into rings and use them along with the pistachios and sesame seed to garnish the cracker. Season with freshly ground black pepper.

Variation tip: Substitute the cream cheese with cream paté and then use red pointed pepper and pine nuts instead of pistachios for a tasty alternative.
